This is a lunch that I sporadically become obsessed with. I’ll eat it every day for a month then get sick of it and not have it for two or three months. I have to say, I haven’t had it in awhile, and its looking pretty good! This is a great recipe because it is such a cheap meal that is very healthy and very filling.
Frugal Tips for this Cheap Healthy Recipe
Wasa Crispbread can be found in the diet food section of your grocery store. Crispbread is not very expensive and I like it because it isn’t something that you want to just sit around and snack on like all the other crackers in the world I seem to not be able to put down. Not to mention they are very healthy for you and give you a fantastic crunch!
*All of my healthy recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitutions can be made either way. My healthy recipes are also made to be as frugal as possible.
Gather It Up!
Deli Turkey (or whatever you like!)
Wasa Crispbread
Grapes
Cheese
1 tbsp spicy mustard
1 tbsp chopped black olives
2 green onions chopped
Cook It Up!
Mix the spicy mustard, olives and green onions together. Layer turkey and cheese on crispbread, smear with mustard mixture.
Serve It Up!
The colors of this cheap healthy recipe make you want to just dig in. Add the grapes and enjoy! The mustard mixture can be left out and you can eat this plain or add your own spread such as hummus!
