Enchiladas, Spanish Rice, and Refried Beans

Frugal Tips for Enchiladas, Spanish Rice, and Refried Beans

Buy on sale! This meal is so cheap as is that about the only way to make it cheaper is to buy the ingredients when they go on sale. You can also freeze enchiladas for later. Just freeze the sauce separately and add cheese the day you make it!

*All of my cheap dinner recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitutions can be made either way. This enchilada meal is also made to be as frugal as possible.

Cheap Dinner Recipe : Enchiladas, Spanish Rice, and Refried Beans

Gather It Up!

2 tortillas per person
1/2 pound ground beef
1/2 pound ground turkey
1/2 medium onion chopped
1 tablespoon chopped garlic
1 can or package of dairy free enchilada sauce
Dairy Free Sour Cream
Dairy Free Cheese
1 box of Dairy Free Spanish Rice
1 can vegetarian refried beans

Cook It Up!

Preheat oven to 350 degrees. Brown meat. Add garlic and onions. Divide meat mixture over tortillas. Roll tortillas up and place them seam side down in a baking dish. Pour enchilada sauce over the top. Sprinkle cheese over enchiladas. For a dairy free version, sprinkle dairy free cheddar cheese or just leave the cheese off. Enchiladas are done when cheese is melted or about ten minutes. Make Spanish rice while enchiladas are cooking. Heat refried beans.

Serve It Up!

Serve enchiladas with sour cream or you can sprinkle olives or green onions over the top.
