Frugal Lunch Recipe : Toasted Basil Chicken and Onion

The Toasted Basil Chicken and Onion is one of my favorite lunches. This is a very easy lunch recipe but it is also healthy. This is also a great leftover recipe for that extra cooked chicken in your fridge!
Frugal Tips for this Lunch Recipe
This recipe screams out for leftovers. Grab some cold chicken and leftover bread for this recipe. Canned chicken also works in this recipe if that is all you have on hand.
*All of my lunch recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitions can be made either way. My lunch recipes are also made to be as frugal as possible.
Basil Chicken Toasted with Onion
Shredded Cooked Chicken
Onion sliced into very thin strips
Dried Basil
French bread sliced (or whatever bread you have on hand)
Cook It Up!
Place shredded chicken on top of bread. Place onion on top of chicken. Sprinkle with basil according to taste. Toast in oven just until chicken is heated and bread is toasted.
Serve It Up!
The Basil Chicken with Onion is best served with Roasted Vegetables.
