Frugal Lunch Recipes : Baked Fish and Vegetables

fish and veggiesI love baked fish, and do not care for fried fish, so this is a healthy meal that I will easily eat. The hubby doesn’t like fish much in any form so I often have it for a cheap and easy lunch.

Frugal Tips for Baked Fish and Vegetables

Fish can be expensive but there are frugal ways around this. Send your husband out fishing in the summer for your lunches and freeze for later or purchase fish only when on sale and stock up. Look for cheaper cuts of fish or stores that sell it cheaper than elsewhere. I often purchase the whiting fish from Aldi’s though they do have salmon and mahi mahi for a little more.

*All of my frugal lunch recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitutions can be made either way. My frugal lunch recipes are also made to be as frugal as possible.

Frugal Lunch Recipe : Baked Fish and Vegetables

Gather It Up!

1 filet of your favorite fish
1/2 medium onion
1/4 cabbage
1 stalk celery
handfull of olives
1 cup chicken broth or 8 chicken broth cubes

Cook It Up!

Chop all of the vegetables up. Place fillet on aluminium foil placed on a baking sheet in case it leakes. Throw veggies on top of the fish. Fold up foil sides. Throw in chicken broth (melted if using frozen cubes). Close up the foil to make a little pouch. Bake in 375 degree oven for 20 minutes or as long as it takes for your type and thickness of fish.

Serve It Up!
I eat this all by itself! Just make throw in a bowl and enjoy!
