Potato Pancake

dairy-free-potato-pancakeThis is a yummy treat for breakfast or dinner! I usually see a potato pancake recipe prepared on top of the stove. I haven’t been able to get that to work for some reason, the potato pancake either falls apart or it is so greasy I can’t eat it. One day I stuck it in the oven and voila! We had ourselves a tasty little treat!

Frugal Tips for a Potato Pancake

Use whatever is leftover in your fridge, mashed potatoes, sausage, onion, mushrooms, olives, or whatever you have in there that you would also throw in an omelette.

*All of my breakfast recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitutions can be made either way. My breakfast recipes are also made to be as frugal as possible.

Potato Pancake Recipe

Gather It Up!

3 cups mashed potatoes
1 cup cooked ground sausage
1/2 cup chopped onion
1 tbsp margarine (dairy free if needed)

Cook It Up!

Preheat oven to 400 degrees. Combine the mashed potatoes, sausage and onion together. Spray the bottom of a nine inch pan and spread the mashed potato mixture in the bottom. Spread the margarine across the top of the potato mixture. Cook until potato pancake reaches the desired crispiness. I like mine pretty crispy!

To freeze: Once cooked cut into triangles and flash freeze for three hours. Throw in a freezer bag. To reheat throw in the oven until it reaches desired hotness.

Serve It Up!

I don’t usually eat much of anything with my potato pancake. Though I’m sure it would be great with other breakfast foods like toast or a couple slices of bacon! You could even use a plain potato pancake as a side to any dish that you would have a potato.
