Vegetable Side Dishes : Roasted Vegetables

Frugal Tip for Roasted Vegetables

While this is best with the veggies recommended it can be used with just about any veggies as long as you watch the cooking time!

*All of my vegetable side dish recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitutions can be made either way. My vegetable side dishes are also made to be as frugal as possible.

Roasted Vegetables Side Dishes

Gather It Up!

2 large potatoes
1 zucchini
1 yellow squash
1/2 medium onion

Cook It Up!

Cut the zucchini and yellow squash into one inch chunks. Cut the potatoes into smaller chunks. Cut the onion into one inch strips. Preheat oven to 400 degrees. Spray a cookie sheet with oil. Spread potatoes, zucchini and yellow squash on sheet and spray the top with oil. Cook in oven for ten minutes. Stir. Cook until almost done. Add onion. Cook for five more minutes.

Serve It Up!

This is a great vegetable side dish with sandwiches or a regular meal!
