Chicken Pot Pie – Can be OAMC and Dairy Free!

I love making individual portions because it keeps me from eating half a pan of whatever it is I’ve made. I also love homemade chicken pot pie so what better than to combine the two!
Frugal Tips for Chicken Pot Pie
Purchase the ingredients on sale when possible and use leftover chicken.
*All of my dinner recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitions can be made either way. My dinner recipes are also made to be as frugal as possible.
Chicken Pot Pie – OAMC and Dairy Free Options!
Gather It Up!
Turkey Gravy (or chicken gravy, but check the ingredients or make your own if you are looking for dairy free)
1 can creamed corn
1/2 cup each chopped carrots, celery, mushrooms
1 chicken breast cooked and chopped
pie crust
muffin pan
Cook It Up!
Layer bottom of muffin tin with pie crust, leaving enough to layer the top once the filling is in. Throw all other ingredients into a pan and heat it up. Pour into muffin tins on top of pie crust. Use extra pie crust to cover top of pies and pinch to enclose. Pierce chicken pot pies with a fork. For the OAMC version you can flash freeze before or after you bake. Bake at 375 degrees for 20 minutes or until browned.
Serve It Up!
This is great for lunch or you could add salad for a great dinner!
