Fajitas are a big hit in our house and they are easy to make so that makes them even better in my eyes! These fajitas are very tasty and can be whipped up in no time, especially if you prep early.
Frugal Tips for Fajitas
Purchase steak or chicken when it is on sale. I will use cheap steak for this meal if I have to but it will be a little chewier so I cut it into thinner strips.
*All of my dinner recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitions can be made either way. My dinner recipes are also made to be as frugal as possible.
Frugal Fajitas
Gather It Up!
1/4 cup lime juice
3 tablespoons oil
1 tablespoon crushed garlic
3 teaspoons soy sauce
1/2 teaspoon liquid hickory smoke
1 pound chicken breasts or steak cut into thin strips
1 onion sliced thin
1 green pepper sliced thin
Cook It Up!
Mix everything together and marinate in the fridge for at least an hour but overnight would be even better. Once marinated, throw everything into a skillet and cook until the meat is heated through and the liquid has reduced.
Serve It Up!
Serve the fajita mixture on tortillas. Add in rice, sour cream, corn, beans, or guacamole to the top of the met mixture and fold up in tortillas.
