Fried Chicken Salad with Tortilla Chips

A salad is a light and easy weeknight meal. Salads are also easy because you can pretty much throw whatever you have around in them.

Frugal Tips for Fried Chicken Salad with Tortilla Chips

You can make fried chicken the night before to make this dish easier and quicker the night you make it for dinner. This dish can also be made without the tortilla chips and you can use whatever fresh vegetables you may have in your fridge.

*All of my dinner recipes can be used with dairy or made into dairy free recipe versions. I have a milk allergy while my husband does not so I often try to make recipes in which substitions can be made either way. My dinner recipes are also made to be as frugal as possible.

Gather It Up!

Chicken breast cut into chunks and fried
fresh veggies
lettuce or spinach
dressing
flour tortillas

Cook It Up!

Spray both sides of the flour tortilla with oil and put in a 375 degree oven until browned. Keep an eye on it as these burn quick! Cut into triangles. Cut up veggies and lettuce. Fry chicken (dredge in flour and fry in a small amount of oil). Assemble salad based on your personal preferences.

Serve It Up!

Serve with the tortilla chips and your favorite dressing!
